Kahramanmaraş’s yogurt and thyme-flavored tarhana is exported to Europe in the form of chips. While 15,000 tons of the 25,000 tons of tarhana produced annually in the city are sent to the domestic market, 10,000 tons are exported abroad. Kahramanmaraş’s geographical indication registered tarhana chips are in high demand in Europe due to their unique flavor and quality.

Initially, tarhana, which used to be spread manually in a classic way, has taken its place among the sources of income of the city thanks to technology and mechanization. Produced in healthy environments in Kahramanmaraş, the soup and snack tarhana are consumed throughout the year. While tarhana is produced as chips, for the table, and as bulgur, it is offered for sale all around the country, and exports are made to Middle Eastern countries, especially European countries. In the city where snack tarhana is turned into chips with the help of machines, tarhana producers prepare the packaged product with options such as baked, spicy, creamy, with cream, and with plenty of yogurt. 10 thousand tons are exported abroad. About 25 thousand tons of tarhana are produced annually in the city; 15 thousand tons are sent to the domestic market, and 10 thousand tons are exported abroad. Tarhana, which is very rich in protein, is made from 5 main ingredients: yogurt, crushed wheat, thyme, salt, and water. Tarhana, cooked in large chrome boilers, is left to rest for a day and then displayed on shelves with machines on the second day and left in the sun in wide areas. Dried, packaged, and produced in many varieties, tarhana is presented to consumers from Kahramanmaraş.
“We send tarhana to domestic and foreign markets” Tarhana producer Ümmet Güngör said, “We have opened the tarhana season. We prepare our tarhana with thyme collected from the mountains and yogurt from Engizek Mountain in the best way. We send tarhana prepared in different flavors to domestic and foreign markets.”
