Emre Yılmaz, the owner of the business, stated that they have added innovation to traditional katmer, saying, “We have been making Dubai chocolate katmer for a long time. I thought about adding this innovation to our 500-year-old traditional dessert because I was annoyed that this chocolate, which consists of a large amount of pistachio, is called Dubai chocolate instead of Gaziantep chocolate. We prepare the katmer here by adding the filling and our own production Dubai chocolate before serving it to our customers. Our customers are showing great interest in this innovation.”
“We want our Gaziantep to be certified.”
Yılmaz pointed out that Dubai chocolate should be certified as Gaziantep chocolate as soon as possible, stating, “We offered this dessert at a reasonable price of 245 TL so that all our citizens can taste this traditional dessert with an innovation. Our only request from the authorities is that pistachio is our geographical indication, and we want this chocolate to be certified as belonging to our Gaziantep as soon as possible because all components describe us, Gaziantep.”
Customers are divided.
Tülin Tulsuz, who stated that the traditional recipe should not be altered, said, “I love katmer; I eat it once a week. I have tried the Dubai chocolate, but since katmer is a historical flavor, I think its recipe should not be changed.” Gönül Ozansoy commented, “We cannot give up on the classics we are used to, but young people prefer new flavors. We should not ignore that either.”
