In Batman’s Sason district, the grape harvest has begun along with the production of grape molasses.
With the collection of grapes grown in the district, cauldrons for grape molasses have been set up in the villages. The grapes collected by grape growers are left in a closed room for at least 2 days to allow them to release their juice more easily, and then they are pressed to obtain the must. The obtained must is placed in large cauldrons and boiled for 24 hours over a wood fire. The must, which reaches a certain consistency, is turned into molasses.
Murat Demir, one of the residents who stated that they have started harvesting grapes with the grape harvest, said that they use the grapes they collect to make molasses, fruit leather, and walnut sausage. Demir said, “With the grape harvest, we have harvested our grapes this year as well. After resting the grapes we collected at home for about 2 days, we press them to extract the juice. We put the obtained must into large cauldrons and boil it with oak wood fire for two days. It needs to boil for at least 24 hours to become molasses; otherwise, it can sour and spoil, becoming harmful. The molasses, which reaches the right consistency, is very medicinal. We especially know that it is very beneficial for the stomach. The grape harvest and these processes in the district last for about a month.”
Naciye Demir, who mentioned that they dip walnut halves into the pressed grape juice to obtain walnut sausage, also said, “Today we pressed grapes. We add flour to the must we obtained and turn it into a paste. We make some of it into molasses, and the other part into a soup to make fruit leather and walnut sausage.”
The black grape molasses, which is said to be good for anemia and protects against the cold in winter, is sold at a price between 200 and 300 liras per kilo, boiled in large cauldrons set up at almost every citizen’s door throughout the district.
