In a shop located in the 600-year-old historic Fidan Han in Bursa, the 135-year-old coffee culture is being continued. Smoky coffee, made for the caravans coming to Erzurum by Esat Efendi who lived in the 1890s for the first time, is obtained from the mixture of 12 different plants. Smoky coffee, which is the only coffee in the world that does not sink grounds, takes its name from the smoke created around the cup on fire. Smoky coffee, which has become a brand of Bursa today, is cooked inside the historic han district of Fidan Han. Smoky coffee, whose fame has crossed the country’s borders, is favored by local and foreign tourists in recent years.

Baycan Budak, who says that smoky coffee was first cooked by his grandfather Esat Efendi in the 1890s, stated, ‘Smoky coffee is the ember coffee made by our grandfather Esat Efendi in Erzurum in the 1890s for the caravans of that time. The name of smoky coffee comes from the smoke created by the ember around the cup. Smoky coffee continued to be made in Erzurum until our grandfather’s death in the 1930s. After a long time, we wanted to continue this tradition in Bursa, the ancient city of the Ottoman Empire. We have been keeping the 135-year-old smoky coffee culture alive here for 15 years. It is the only coffee in the world that does not sink grounds.’
Consists of 12 flower essences, the grounds do not sink
Budak, stating that the fame of smoky coffee has become known worldwide beyond Turkey’s borders, said, ‘We cook our coffee in a cup. It contains 12 flower essences. Because of these mixtures, the grounds never sink. Those who drink it enjoy both the grounds and the water at the same time. The fame of this coffee has spread both domestically and internationally. Local and foreign tourists have started to come. There is an incredible intensity, especially from our metropolitan cities. It has become a brand of Bursa as a special coffee.’
Trademark registration obtained, the original is in Bursa
Budak, stating that they have taken measures to prevent counterfeit coffees, said, ‘We have also obtained a trademark registration. When the brand started to be recognized, we registered the name to prevent counterfeit coffees. There are also those who try to make other coffees in the same cup. Of course, they could not match our coffee. Those who want to drink the original smoky coffee can come to the historic Fidan Han in Bursa.
